And for those of you who want to learn how to eat steak tartare, I recommend 110% to go to a classed schooled chef who has done it more times than you will eat throughout life. Fantastiskt är ordet och jag har valt att dela upp recensionen i tre olika delar 1) Restaurangen i sin helhet 2) Personal och service samt 3) Menyn, maten och smakerna.
1. Jag har i många recensioner försökt beskriva hur jag vill att en resturang ska se ut och vilken atmosfär den ska ha. Hantverket bockar av de flesta komponenter på den listan med "lummigt", "luftigt", "hemtrevligt" och den viktigaste "lyxigt men opretentiöst". Jag skulle vilja summera Hantverket som en folklig causal fine dining. När jag går på resturang vill jag känna mig välkommen, att det inte är en vanlig kväll hemma i köket utan att jag går dit för att bli servad och ska kunna släppa på all kontroll - där den lyxiga känslan kommer in i bilden. Den rustika känslan i restaurangen som skapas med hjälp av interiören ger den hemtrevliga känsla. Det är verkligen någonting speciellt med trä och finsnickeri som är det första man möts av när man kliver in i entrén och som står utspritt i hela restaurangen. 3. Till sist maten - modernt nordiskt med cirka 20 alternativ på menyn som bidrog till grov beslutsångest. Det är mellanrätter som är större än vanlig tapas och inte en ”hel” varmrätt (85-195), men jag säger såhär: man får MYCKET för pengarna. Jag blev enligt rekommendation mätt på det jag beställde (2 egna rätter, 1 bröd bröd och 3 potatisar som också är en portion) men smakade såklart på mina föräldrars mat också.
1. Hasselbackspotatis, löjrom, syrad grädde och färsklök. Vilka höga förväntningar jag haft på dessa och jag är och var så besviken. Jag vet inte om det är mitt saltmissbruk som spelar in i bilden men det smakade ingenting. Eller jo, syrad grädde. Ett klockrent exempel på när förväntningar förstör mer än hjälper. Kan erkänna att jag blev lite rädd för att jag hade satt standarden för högt för maten.

4. Stuvade makaroner med Karl-Johan svamp, panchetta, svartpeppar och lagrad ost. Som ni förstår smakade det lika gott som det låter. Aptitligt geggigt och ett berg med nästan skrytsamt mycket riven ost på toppen. Panchettan var stekt så karamellen smög sig igenom i smakerna vilket jag tyckte band ihop alla annars gräddiga och "tunga" smaker.
5. Nyrökt röding med blomkål, färskpotatis, krondill, gurka och blåmusselsås. Om du gillar fisksmak kommer du gilla denna rätt. Fiskens filé fall i sär sådär fins man önskar att det ska göra men fick mer elegant smak tack vare såsen. Egentligen inte utstickande rätt, förutom att det var väldigt vacker att kolla på.
6. Svampsmörgås med löjrom, kryddost, gräddfilskvarg, dill och rågbröd. Ojoj... som att man åt midsommar, höstgryta och julbord på samma gång. Men man kan inte få allt.
Dryckesmenyn tyckte jag också var trevlig med avstamp i Frankrike och Tyskland. För att inte nämna det svenska utbudet som stod för all öl vilket är helt fantastiskt. Inne på Mauritz Widforss hittar man ett kul utbud med en bladning av jaktkläder, redskap men också mycket klassiska och snygga skjortor, kavajer, jakor och hattar både på dam och herrsidan. Även en del inredning och annat som rör interiör. Oavsett om jag klär mig i denna typen av stil eller inte är kläderna fortfarande så fina med sina gröna nyanser och mjuka material. But luckily, they had a perfectly sounded pulsating music in the background that eased up and contributed to the atmosphere. They really live up to what a bistro described as, lighthearted and small. I even advised their bar as they have around the open surface inside the premises, very neat.
The only minus I can immediately think of is that the lighting was a little too dark and it was difficult to get a direct idea of what it was you were served. I think it's nice to see the different colors, shapes and components that also enhance the dining experience. Luckily, the technology is so developed today that you can light up with a lamp, and I ignore this in my overall experience because it was believed everything really cozy and sit there and sip on a glass of wine. A small candle or two would otherwise not have damaged to raise the cozy factor.
