Launched by chef Yurii Kovryzhenko, a long-time ambassador of Ukrainian cuisine, and his partner, Mriya is a self-described “Ukrainian neo-bistro” that recruited staff from among those displaced by the war in their homeland. The dishes aim to tell the story of modern Ukraine and include vegetables fermented according to Ukrainian methods, passed down through the ages.
