There's a new London restaurant by acclaimed Chef Thomas Baranski

London's culinary scene is about to get a vibrant infusion of Modern Mexican and Peruvian flavours as Chayote prepares to make its debut on October 12th, overlooking the picturesque St Katharine Dock's marina. Renowned Chef Tomasz Baranski, hailed as "one of the world's top chefs" by Forbes, will lead diners on a gastronomic journey through the distinct tastes of South America.

Chef Baranski's illustrious career has seen him master Mexican, Peruvian, and Spanish cuisine in prestigious Michelin-starred restaurants across Spain, Mexico, and London, culminating in 18 years of culinary expertise. His unique blend of Mexican and Peruvian gastronomy, infused with a Spanish twist, will be showcased in Chayote's exciting all-day à la carte menu.

Menu highlights include tostadas, tacos, and quesadillas alongside fresh seafood options like ceviche. Sharing dishes will also take centre stage, featuring things like lamb barbacoa in adobo, banana leaf, iberico pork carnitas, roast chayote, and red mole. Make sure you leave room for dessert; spicy chocolate doughnuts and chocolate habanero tart are the stars of the show.

Named after Mexico's edible gourd, Chayote's sophisticated interior mirrors the lush, tropical environment of South America, featuring rich greens, natural wood, and exposed brickwork. The restaurant's 80-seat capacity is decorated with statement lighting, sumptuous velvets, and leather, creating a cosy dining atmosphere. Outside, diners can enjoy their meals overlooking the yacht marina, all under the warmth of heated umbrellas.

Chayote's Mexican, Peruvian, and Spanish roots extend to their cocktail menu, curated by Bar Manager Clark Crown, showcasing tequila-based options like the chayote margarita and the carajillo, a hot coffee cocktail. Mezcal and Pisco creations are also in the mix, including an aromatic and smoky mezcal original and a mezcal mule with refreshing hints of ginger, mint, lime, and Indian bitters.

The wine list also complements the dishes, with bottles hailing from Mexican, Spanish, and South American regions, including Tempranillo, Syrah, Nebbiolo, Carignan, Merlot, and unique orange wines. 

Sustainability is also at the heart of Chayote's concept, from B Corp-certified drink brands to waste reduction efforts, energy efficiency, sustainably sourced ingredients, and partnerships with local businesses to support sustainability initiatives.

Chayote will open on 12 October.
